    Directions

    Step1

    Preheat your oven to 180°C (160°C fan) / 350°F. Line a small baking tray with parchment paper.

    Step2

    In a large bowl, combine the milled flaxseed, milled chia seeds, grated courgette (ensure it's well-squeezed to remove excess water), grated carrot, nutritional yeast, garlic powder, onion powder, dried mixed herbs, and salt.

    Step3

    Add the water and mix thoroughly until a thick, cohesive mixture forms. Let it sit for 5 minutes to allow the seeds to absorb the liquid and thicken.

    Step4

    Using your hands, form the mixture into 6 small, flattened bite-sized patties or squares.

    Step5

    Arrange the bites on the prepared baking tray.

    Step6

    Bake for 18–20 minutes, or until firm to the touch and lightly golden at the edges.

    Step7

    Allow to cool completely on a wire rack. They will firm up further as they cool.

    Step8

    Store in an airtight container in the fridge for up to 5 days.
